After launch we watch the important paths, apply updates, and stay available for an agreed window. If you want that to continue, it becomes a support plan with a named contact.

After discovery, with the scope. You can stop there. You do not pay for a build you have not approved.
On a rhythm we agree at the start, usually a weekly demo during the build. You will not have to ask whether the work is moving.
